- 1/2 cup sour cream
- 1/4 cup heavy cream
- For the Strawberry Topping:
- 1 pint fresh strawberries, thinly sliced
- 1/4 cup strawberry jam
- 1 tbsp water
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes, then let it cool.
- Make the Cheesecake Filling:
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and heavy cream until well combined.
- Pour the filling over the cooled crust.
- Bake the Cheesecake:
- Place the springform pan in a larger baking dish and add hot water until it reaches halfway up the sides of the pan.
- Bake for 60-70 minutes, or until the edges are set but the center is slightly jiggly. Cool for 1 hour at room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the Strawberry Topping:
- Heat the strawberry jam and water in a small saucepan over low heat until smooth. Let it cool slightly.
- Arrange the sliced strawberries in an artistic pattern on top of the chilled cheesecake. Brush the strawberries with the jam mixture for a glossy finish.
- Serve:
- Remove the cheesecake from the pan, slice, and serve chilled.
