Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
    • Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes, then let it cool.
  • Make the Cheesecake Filling:
    • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and heavy cream until well combined.
    • Pour the filling over the cooled crust.
  • Bake the Cheesecake:
    • Place the springform pan in a larger baking dish and add hot water until it reaches halfway up the sides of the pan.
    • Bake for 60-70 minutes, or until the edges are set but the center is slightly jiggly. Cool for 1 hour at room temperature, then refrigerate for at least 4 hours or overnight.
  • Prepare the Strawberry Topping:
    • Heat the strawberry jam and water in a small saucepan over low heat until smooth. Let it cool slightly.
