Juicy ground chicken is stuffed with layers of ham and Swiss cheese, then baked to perfection and topped with a creamy sauce. It’s a crowd-pleaser for weeknight meals or special occasions!

Ingredients

Scale
  • For the Meatloaf:
    • 1 1/2 lbs ground chicken
    • 1 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 1 large egg
    • 1/4 cup milk
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 6 slices deli ham
    • 6 slices Swiss cheese
  • For the Sauce:
    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 1 cup milk
    • 1/2 cup shredded Swiss cheese
    • 1/4 tsp nutmeg (optional)
    • Salt and pepper to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Assemble the Meatloaf:
    • On a sheet of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
    • Lay the ham slices evenly across the meat, followed by the Swiss cheese slices.
    • Carefully roll the meatloaf into a log, using the parchment paper to help guide you. Seal the edges to prevent cheese from leaking out.
  4. Bake the Meatloaf:
    • Place the rolled meatloaf on the prepared baking sheet or in the loaf pan. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Make the Sauce:
    • While the meatloaf is baking, melt butter in a small saucepan over medium heat. Stir in the flour and cook for 1 minute.
    • Gradually whisk in the milk, cooking until thickened. Add the shredded Swiss cheese and stir until melted. Season with nutmeg, salt, and pepper to taste.
  6. Serve:
    • Let the meatloaf rest for 5 minutes before slicing. Drizzle the creamy sauce over each slice and garnish with fresh parsley if desired.

Notes

  • For extra flavor, add a layer of Dijon mustard or spinach leaves along with the ham and cheese.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat slices in the oven or microwave.
  • Swap Swiss cheese with Gruyère or mozzarella for a different taste.
