Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (165°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- Make the Cheesecake Filling:
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and heavy cream. Mix until creamy.
- Gently fold in rainbow sprinkles, being careful not to overmix to avoid the colors bleeding.
- Assemble and Bake:
- Pour the filling over the prepared crust and spread evenly.
- Place the springform pan in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the springform pan.
- Bake for 60-70 minutes, or until the edges are set but the center is slightly jiggly.
- Cool and Chill:
- Allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour.
- Remove from the water bath, cover, and refrigerate for at least 4 hours or overnight.
- Serve:
- Top with whipped cream and extra sprinkles before serving for a festive touch.
Notes
- For a no-water-bath method, bake at 300°F for a longer time to reduce cracking.
- Avoid overmixing the sprinkles into the batter to prevent the colors from smearing.
