This Recipe for Reuben Casserole transforms the classic deli sandwich into a deliciously layered baked dish. Packed with corned beef, sauerkraut, Swiss cheese, and creamy dressing, this casserole is perfect for a comforting dinner or a hearty potluck dish.

  • 6 cups rye bread, cubed
  • 1 lb corned beef, shredded or diced
  • 2 cups sauerkraut, drained
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 1/4 cup mayonnaise
  • 1/4 cup melted butter
  • 1 teaspoon caraway seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Spread half of the cubed rye bread evenly in the bottom of the baking dish.
  3. Layer the corned beef, sauerkraut, and 1 1/2 cups of Swiss cheese over the bread.
  4. In a small bowl, mix Thousand Island dressing and mayonnaise. Drizzle the mixture evenly over the layers.
  5. Top with the remaining rye bread cubes. Drizzle melted butter over the top and sprinkle with caraway seeds if desired.
  6. Cover with foil and bake for 20 minutes.
  7. Remove the foil, sprinkle the remaining Swiss cheese over the top, and bake for another 10-15 minutes, until the cheese is melted and bubbly.
