This Recipe for Reuben Casserole transforms the classic deli sandwich into a deliciously layered baked dish. Packed with corned beef, sauerkraut, Swiss cheese, and creamy dressing, this casserole is perfect for a comforting dinner or a hearty potluck dish.

- 6 cups rye bread, cubed
- 1 lb corned beef, shredded or diced
- 2 cups sauerkraut, drained
- 2 cups shredded Swiss cheese
- 1/2 cup Thousand Island dressing
- 1/4 cup mayonnaise
- 1/4 cup melted butter
- 1 teaspoon caraway seeds (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Spread half of the cubed rye bread evenly in the bottom of the baking dish.
- Layer the corned beef, sauerkraut, and 1 1/2 cups of Swiss cheese over the bread.
- In a small bowl, mix Thousand Island dressing and mayonnaise. Drizzle the mixture evenly over the layers.
- Top with the remaining rye bread cubes. Drizzle melted butter over the top and sprinkle with caraway seeds if desired.
- Cover with foil and bake for 20 minutes.
- Remove the foil, sprinkle the remaining Swiss cheese over the top, and bake for another 10-15 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- For a crunchier top, broil the casserole for 2-3 minutes after baking.
- Substitute Russian dressing for Thousand Island if preferred.
- Store leftovers in an airtight container and reheat in the oven for best results.
