This snickerdoodle recipe without cream of tartar delivers all the classic cinnamon-sugar flavor you love with simple pantry staples. Perfectly soft, chewy, and spiced, these cookies are an easy alternative when cream of tartar isn’t on hand.
Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 ¾ cups (340g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon (for rolling)
- ¼ cup (50g) granulated sugar (for rolling)
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
Step 2: Mix Wet Ingredients
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 4: Prepare Cinnamon-Sugar Coating
In a small bowl, mix the cinnamon and sugar for coating. Scoop tablespoon-sized portions of dough, roll them into balls, and coat them evenly in the cinnamon-sugar mixture.
Step 5: Bake
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are set but the centers are still soft.
Step 6: Cool and Serve
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container.
Notes
- For extra softness, do not overbake. The cookies will continue to set as they cool.
- Substitute salted butter, but reduce the added salt by half.
- To freeze, shape dough into balls, coat in cinnamon sugar, and freeze on a tray. Once frozen, transfer to a bag and bake directly from frozen (adding 1-2 minutes to baking time).
