- ½ cup unsweetened peanut butter (creamy or chunky)
- 1 tablespoon powdered erythritol or monk fruit sweetener
- ½ teaspoon vanilla extract (optional)
- Pinch of sea salt (optional, for garnish)
Instructions
- Melt the Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring after each, until smooth.
- Prepare the Peanut Butter Filling: In another bowl, mix peanut butter, powdered sweetener, and vanilla extract until smooth.
- Layer the Cups: Using silicone muffin molds, spoon a thin layer of melted chocolate into each mold and spread evenly. Freeze for 5–10 minutes to set.
